Easy Oven Baked Korean Drumettes

Sweet and Tangy Korean Drumettes

Some regions of the world are responsible for some great flavors. Korea is one such region. The flavors of Korean cuisine are notably hot and spicy; I prefer to tame the spiciness. Korean food can also be sweet and tangy, and this is the flavor combination that appeals to my palate. In preparing these baked Korean drumettes, I leant toward the sweet and tangy. A little blend of soy sauce, some honey and ginger really make this recipe. I like to rein in the salt intake, so I substituted coconut aminos for the soy sauce. And if preferred you can always add a few dashes of red pepper flakes to your marinade to up the heat. Sweet, tangy and spicy is definitely doable. If you have a hungry clan to feed, precooking these wings make them a breeze to get on the table in a hurry. Pair them with a side of our homemade seasoned fries and the kids will eat this up In a New York minute.

These delicious Korean drumettes are a great anytime recipe. They can be served as an appetizer. Just add a spicy sriracha mayonnaise sauce on the side for dipping. They can be served for lunch or dinner. Just add fries and some coleslaw or some creamy mashed potatoes. The little ones will be happy with a side of ketchup. Talk about finger licking good. And pleasing for everyone. Meals donít get any easier than this. These can be made with flats as well for a more chicken wing experience.

Ingredients
Instructions
  1. Preheat oven to 425°
  2. Precook chicken by adding to a large pot of lightly salted boiling water for 10 minutes. Drain and set aside
  3. In a large bowl Stir to combine all remaining ingredients. Reserve 1/2 cup of sauce for basting. Add chicken to remaining sauce and toss to coat
  4. Transfer to a parchment lined baking. Bake, basting chicken every 5 minutes, until cooked through and slightly charred. About 20 minutes

Korean Olympic Drumettes

These drumettes were created as a nod to South Korea and the olympics. They were a wonderful appetizer to eat while we watched the winter olympics in the South Korea city of Pyeongchang. The winter games made for some great tv viewing, but the I did not envy the weather one little bit. Way too cold for me!

I like fries!!! Just like most people, I like fries. I like cheese. I like good burgers. I like chicken wings and the hotter the better. I like red wine. As humans we tend to like all the things that are the least healthy for us. However, this is one of the reasons we were blessed with acute mental capabilities. We learn to exercise self-control. We learn that in order to maintain good health we need to make sacrifices. We learn that we are what we eat and make choices that reflect this. In my journey to find healthier fries I came up with these wonderfully seasoned, oven baked, homemade fries. Gone are the days of deep fried greasy fries. These healthier homemade fries use only one tablespoon of Avocado Oil and are then roasted in the oven until the insides are tender baked potatoes and the outside is crispy goodness. The best part about this is you can use whichever herbs are your favorite to season them. I like an Italian blend of herb and sometimes juice them up with some minced garlic. Oy! Such goodness and for just a fraction of the calories and fats that usually come with fries. What is not to love?

Health Benefits of Baked Fries

A typical serving of potato French fries contains as much as 275 calories and up, and 14 grams of fat. A simple, medium sized russet potato will have about 120 calories with less than 1 gram of fat. Just as a point of comparison, according to the Wendyís menu a small order of their fries contain 290 calories. McDonalds indicate on their website that a small order of fries contain 230 calories with 11 grams of fat. Did I mention these were just for a SMALL order of their fries? Now I get that for a lot of people McDonalds are the holy grail of French fries. But that is just because they have never tried these healthier, homemade, seasoned fries. You can cut these potatoes as fat or as thin as you like. Put them in a bowl with a tablespoon of oil, the seasonings of your choice, toss to coat and put them in the oven to create magic. Itís as easy as that.

  1. Preheat oven to 450°
  2. Place potato sticks into a medium bowl. Add remaining ingredients and toss to coat.
  3. Transfer Fries to a parchment lined baking sheet and bake 30 minutes or until the center is soft and edges are crispy.

Keeping your Homemade Fries Healthier

As a final note there is one more thing I would like to point out. An extremely large amount of potatoes today are cultivated using genetic engineering. The FDA has apparently been unable to find any issues with human consumption of genetically modified foods. However, due to their relative newness, there is no long term data available to determine the effects of eating foods that have been genetically modified. For this reason, I only eat organically grown potatoes. Another plus to eating organic potatoes is that you are able to eat the skin. Most of the valuable nutrition comes from a potatoes skin. But if they are not organic then they have probably been grown with the assistance of pesticides, which renders the potato less healthy. Healthier Roasted Sweet Potato Salmon Cakes

I have been on a journey of healthier eating for many years now. I do not partake of fast foods and eat out only on occasion. I enjoy cooking at home as I know exactly what is in the foods I prepare and eat. Although sometimes it is nice to have someone else cook for you, when you eat out you are not afforded that luxury. while skimming the web looking for something new to try I came upon these delicious looking sweet potato salmon cakes. To make them my own I made them with a roasted sweet potato. I pierced the potato with a fork a couple of times and roasted in the oven for approximately 40 minutes, until very soft. Once it had cooled off a little I used a spoon and scooped out all of the flesh of the sweet potato. This process afforded a slight smokey flavor to the natural sweetness of the potato and it was well worth the extra effort. What I really liked about this method is that the potatoes can be prepared unto a day or two in advance. How much more convenient can we make this.

Spicy Salmon Cakes

When making these sweet potato salmon cakes you remain in control of the heat factor. If feeding little one you made need to reign in the use of the chipotle powder, but if this dish is being made for adults you can add a little powder to the salmon cakes as well as the topping. This gives the cakes a nice amount of heat. And the use of greek yogurt really counteracts the heat in a flavorful way. The trick is to experiment and see what fits your tastebuds. I served with a little side of wilted spinach which paired so nicely with these salmon cakes. There is so much flavor in the cakes themselves that the simplicity of the spinach was a perfect fit.

Chipotle Yogurt Sauce
Instructions
  1. In a large bowl combine all ingredients and mix to combine.
  2. In a large skillet heat the two tablespoons of oil over a medium heat.
  3. Form the salmon mixture into 6 evenly sized patties. Fry in the skillet until golden brown color, about 5 minutes per side.
Chipotle Yogurt Sauce
  1. While your patties are cooking make you chipotle sauce by combining all ingredients in a small bowl. Serve on top of the patties.

Low Cost High Class Sweet Potato Salmon Cakes

This dish is simple enough to feed the family, yet can be served as a very classy entree. And all for about $1.66 per person. The can of wild salmon costs about three dollars. The sweet potato is less than one dollar, and the green onions go for about $1.50 per bunch. The accumulation of pantry staples plus the spinach and a small cup or two of yogurt would take the cost of this recipe up to about ten dollars total and it serves six. This is fantastic value for the money and with tons of flavor. What’s not to love about this recipe?

What Exactly is Clean Eating?

What is clean eating exactly?

Despite recent reports that claim washing meat serves no other purpose than to spread bacteria, I still wash my chicken. In my kitchen, all fruits and vegetables are treated to a water bath before consumption. Does this mean I eat clean? Yes and no. In my mind the practice of clean eating has always referred to the consumption of foods in their most natural existence. Clean eating means to do away with foods that are processed as well as foods that are contaminated by pesticides, insecticides and herbicides. Foods that are organically grown, sustainably sourced and naturally raised all fall into the category of clean foods.

Organic Foods

Organic foods are food sources that are cultivated without the use of pesticides, insecticides or man-made fertilizers. They are naturally grown foods created by nature. They contain zero genetically modified organisms. Livestock is fed from feed that contain no additives and must be raised in conditions natural to their behavior. Fish is wild caught. The underlying emphasis of organic foods is that they are naturally occurring. To be USDA certified organic suppliers must conform to very rigid federal guidelines with regards to their animal raising practices, their soil quality and their use of pesticides and fertilizers.

Sustainably Sourced Foods

Sustainable sourcing refers to the practice of attaining a food supply in such a way as to not be detrimental to the environment. The phrase is used to describe foods that can be obtained from the same source and in the same manner from now and moving forward. Sustainable sourcing creates no danger to the initial supply chain. A fisherman who catches fresh fish in the ocean is practicing sustainable sourcing. There is little to no danger that his fishing will cause extinction to the fish he is sourcing. A farmer who naturally breed and raises cattle will unlikely cause the extinction of cows.

Naturally Raised Foods

Cage-free chickens are the example that first comes to mind, and is the most widely thought of example of animals being raised unnaturally. It is a very sad thought when you picture a chicken farm that consists of hundreds upon hundreds of caged chickens. They are kept in small cages, stacked on top of one another, that rarely afford them the space to turn around. A simple search on you tube will show you the unimaginable cruelty afforded caged chickens.

Natural or All-natural is a hugely popular, yet highly deceptive buzz word use in food labeling. An example of this would be the all-natural chicken pot pie that was made using cream from a cow treated with rBGH. For those of you who are unaware Recombinant Bovine Growth Hormone (rBGH) is a genetically modified version of a cow’s natural growth hormone that has the cow gene spliced into their DNA. The practice of using rGBH is to enable the cow to produce more milk. This hormone has been banned from use in organically raised agriculture by the USDA. This is why it has become so important that we take the time to read food labels. Get familiar with them. This is the only way to be sure of what you are eating.

Slow Cooker Cioppino Recipe

Easy Slow Cooker Cioppino Recipe

When I came upon this easy slow cooker Cioppino recipe I was instantly intrigued about its origin. With a name like Cioppino it had to be Italian, but I wanted to learn more. I am not much of a wikipedia user, but they do have this quaint story to tell about the origins of Cioppino. ìCioppino was developed in the late 1800s primarily by Italian immigrants who settled in the North Beach neighborhood of San Francisco, many from the port city of Genoa. When a fisherman came back empty handed, they would walk around with a pot to the other fishermen asking them to chip in whatever they could. What ever ended up in the pot became their Cioppino.î I am not sure how accurate this is, but I like the story for the sense of coming together, the community taking care of its own. The story warmed my heart much like the stew warmed my body.

Cioppino A Seafood Stew

This Cioppino is the perfect seafood stew. Not to be confused with a bouillabaisse, which is traditionally made with a white fish broth, Cioppino is tomato based. Slowly cooking the base in the slow cooker allows all of the flavors of the added vegetables (think onions, celery, garlic, bell peppers) to come together in a rich tasting chunky broth. The best thing about this recipe is its flexibility. From the vegetable that you pick to add to the base to the mix of seafood that you choose, this dish can be made using your own personal favorites. For this preparation I used a mix of cod, crab and shrimp. However, halibut, haddock, scallops, mussels and lobster would all go really nicely in this stew. This dish pairs really well with some nice crusty bread. Use the bread to help soak up all of the broth. Serve with a small garden salad for some extra nutrition.

  1. In a 4 quart crock pot combine the first twelve ingredients. Cover and cook on low for 4 hours.
  2. Add the Cod, shrimp, clams and crab meat. Cover and cook an additional 30 minutes until shrimp turn pink and fish flakes easily with a fork.
  3. Remove the bay leaf, stir in the parsley and garnish with the fresh basil.

Easy Cioppino

This meal can be made for a comfy family dinner yet is elegant enough to serve at a banquet. It can be made in advance and then reheated when you are ready to serve. Alternately, you can prepare the base and store in vacuum sealed containers in the freezer for up to six month. When you are ready simply remove from the freezer and defrost. Add your fish and reheat for about 30 minutes or until fish is cooked through and the stew is hot. IT just does not get any easier than that. This method allows you to enjoy a delightful Cioppino at just about any time.
