In terms of food, eggs and avocados are two of my favaorite things. So this easy, healthy avocado egg salad recipe that takes avocado toast to a whole new level, was my kind of thing. I confess, I break the dietary cardinal rule on a regular basis, I do not eat breakfast everyday.  But when I do, this is my preferred breakfast menu option.  The protein in the eggs and yogurt and the healthy fats in the avocado make this a super power breakfast and will keep me full for several hours. The lemon juice adds just enough of a zest to keep this interesting too. If anyone cares to share, I would be interested in their favorite breakfast menu ideas. Sometimes it is hard to keep up a healthy eating diet plan and keep the menu interesting.

So this avocado egg salad recipe has become my go to breakfast recipe, while avocado stocks last. Which I am sure we have all heard the latest drama crisis that implies the human desire for avocado’s are likely to make them extinct.  My solution was to grow my own indoor avocado tree.   1. In a medium-sized bowl mash avocado, lemon juice and yogurt.

This has to be the best seared salmon recipe I have tried in a long time. Coupled with this avocado remoulade it was amazingly fresh and simple. The avocado remoulade whips up in a flash. The addition of the fresh lemon juice in the remoulade is fresh and zesty.

Wild caught Atlantic salmon is one of my favorite menu choices. Rich in omega-3 fatty acids, this is a very healthy fish.  I have long ago stopped eating any kind of farmed fish, which is high in the not so good omega-6 fatty acids. According to the wildely available, limitless studies conducted there are many more pro’s associated with wild caught fish than their farmed counterparts. Antibiotic consumption is one of my bigger fears. Humans are reportedly becoming more and more immune to antibiotics due to the fact that we are consuming so much of them through our food supply. It is definitely time to reevaluate and reform our eating habits. Start now.

Crispy Seared Salmon with Avocado Remoulade

Ingredients
Instructions
  1. Put avocado pieces and lemon juice into a blender and pulse until well combined. Slowly add olive oil you have reached your desired consisteny of sauce, I retained a little texture in mine. Add shallots, parsley, mustard, salt and pepper and pulse to combine.
  2. Heat a skillet with the grapeseed or avocado oil until hot. Do not let the oil smoke.
  3. Season both sides of the salmon with salt and pepper. Place the salmon in the hot skillet and cook until desired crispness, about 3 to 4 minutes per side
  4. Serve salmon on top of the avocado remoulade sauce and a sprinkling of fresh parsley for garnish, optional.

The introduction of pies, and my favorite healthy vegetable pie, to the culinary world was a huge revelation!  The flavor combinations and ingredient choices left so much open to the imagination. I have enjoyed chicken pies, fruit pies, beef pies, vegetable pies, the choices are limitless. We could eat a pie every day for the next month and never eat the same ingredient twice. For this reason alone, I am a huge pie fan.  

Pairing a slice of pie with a nice little side salad makes for a heatlhy fulfilling meal that I would gladly serve to my family. Another bonus is being able to put ingredients together in a crust and clean up the kitchen while it cooks. When I am finished eating, all that remains are forks and plates. Can it get any easier?

This delicious pie makes for a delightful, healthy breakfast or a light lunch. It is incredibly tasty and full of good for you nutrition. This recipe provides one easy method to get in your recommended daily amount of vegetables without adding a lot of calories, and that is a win win for everyone.

Ingredients
Instructions
  1. Preheat oven to 375°
  2. In a large skillet melt butter over medium-high heat. Add onions and cook until caramelized,
  3. Add bell pepper and cook an additional 4 minutes, until slightly softened. Add garlic and cook an additional 1 minute
  4. Add spinach, tomatoes, thyme, salt and pepper to taste, stir to combine, and let cool.
  5. In a mixing bowl beat eggs and half-and-half together. Add salt, pepper and cheese and combine.
  6. Put the vegetable mix in the pie crust and cover with the egg mixture
  7. Bake for 45 minutes or until set.
Recipe Notes

This recipe is very similar to a quiche, but the minimal use of eggs and milk create a more meatier interior.
