Eggs are one of my favorite foods. For the longest time eggs were given a bad rap due to their cholesterol content. However, time and science has since proven that eggs are not the culprit. The cholesterol in eggs has absolutely nothing to do with our blood cholesterol levels. Whew, what a relief. I love eggs! Don’t you dare tell me I should not eat eggs! Low in calories but high in healthy nutrients, eggs are one of the healthiest foods we can eat. One whole egg provides 7 grams of good quality protein, iron, vitamins and minerals. They contain lutein, which may help to ward off age related macular degenerative diseases. They also contain choline, which helps to keep our brains healthy. And hello! Did I mention the protein in eggs? Protein helps to keep you feeling full for a longer period of time, so you are less likely to want to snack in between meals.

Egg Convenience

Another beneficial aspect of the almighty egg is there convenience. Eggs are the perfect portion size for feeding one or feeding twenty, just crack open one to two eggs per person. Boiled, fried, scrambled or baked, an egg can be prepared in numerous ways and leave you feeling like you have eaten something different every time. A hard-boiled egg can be eaten anytime anywhere. Or you can chop it up and combine it with an avocado to make my really healthy avocado egg salad recipe. They can be eaten whole or chopped as a salad topping. Sometime I enjoy a fried egg on top of a slice of toast. Scrambled eggs with mushrooms and onions make a really satisfying meal. If you need to feed a large crowd they can be baked like a casserole. Omelets, quiche’s, frittatas and strata’s are just a few examples of the many ways we can enjoy eggs. Their ease and convenience is unrivaled.

Spinach, Cheddar and onion Egg Bake

This delightful baked egg recipe includes the added nutrition of fresh spinach along with some cheddar cheese and green onions. You can omit the cheese to make it that much healthier,
but since I do not get to enjoy these kinds of breakfasts very often I indulge once in a while. I sautÈed the onion and slightly wilted the spinach before covering with the whisked eggs and baking in the oven. This is a very basic baked eggs recipe, but the potential is endless. You can add in anything your taste buds desire. Try this recipe with some smoked salmon or diced shrimp to make a fanciful evening meal. Or if you like you can add some crumbled bacon or sausage. I personally prefer to add loads of vegetables like asparagus, chard, tomatoes or mushrooms. Like I said, the possibilities are endless. Let you imagination run away with this recipe.

  1. Preheat oven to 425°
  2. In a large bowl, whisk together the eggs, milk, garlic, 1/4 teaspoon of salt and black pepper until well combined. Whisk in 1/2 cup of cheddar, saving the rest for topping.
  3. In an oven safe skillet warm the EVOO over medium-high heat until shimmering. Add the onion, mushrooms and remaining salt. Sautee, stirring frequently, until the onion is tender and the mushrooms are slightly softened, about 3 to 5 minutes.
  4. Add the spinach and cook until the spinach has wilted, about 30 to 60 seconds.
  5. Spread the mixture in an even layer on the bottom of the skillet. Whisk the egg mixture again and pour over the egg mushroom mix. Sprinkle the remaining cheddar on the top and bake until the middle is just barely set, about 10 to 12 minutes.
  6. Remove the frittata from the oven and let it rest for about 10 minutes before slicing. Sprinkle with dill and serve immediately or refrigerate. The frittata will keep for up to 3 days in the fridge.

Itís hard to imagine, but when I think of this easy pickled onion recipe I am at a loss for words. I try my best not to exploit the word delicious, butÖ These pickled onions are just delicious! The recipe is so quick and easy I make them all the time now. And they will last for a couple of weeks when stored in the fridge. These pickled onions can be added to just about anything and they will add a nice tart crunch to the dish. I adore them on my salads or you can add them on to your sandwich, top tacos or a nice steak. And did I mention just how delicious they are? And how easy they are to make? I am so hooked!

Quick Pickled Red Onion Recipe

To make this super quick pickled red onion recipe just mix up a bath of vinegar, water, sugar and salt and soak the sliced onions in it. If you leave them on the counter you can enjoy them in an hour. However, they are best when left to soak overnight in the fridge. I like to use a mandolin when I make these so that the slices are even and I can get these perfectly beautiful round rings of onion. I will make them in a mason jar. This way when I want to put them on the table I do not have to move them to a plate. They look gorgeous in a jar. I cut a clove of garlic or two in half and add to the jar for added flavor, along with some seasonings of choice.

Customized Easy Pickled Red Onions

Add a chili pepper for a little extra heat. Seasoning your solution to enhance your dish is highly recommended. If you are cooking an Asian inspired dish, adding a little fresh minced ginger to your onion bath will enhance the Asian aspect of the food. You can also season the liquid with some sprigs of thyme or cinnamon sticks. Whole cloves lend a rather elegant look and add a warm somewhat sweet flavor to the onions. The best thing with these pickled red onions is to experiment with your flavorings. This recipe would work equally as well with white or yellow onions. I just use red because the color makes a wonderful presentation. After a day or so in the fridge they fade to a vivid pink color that just makes the mouth water. And they do not disappoint, these red pickled onions are delicious! Did I say that already? But don’t take my word for it, try them yourself.

  1. Combine vinegar, water, sugar, salt and thyme in a bowl. Whisk together until sugar and salt are completely dissolved.
  2. Put the onion in a bowl or mason jar, add the garlic, and pour the vinegar mix over the onion.
  3. For fastest preparedness, let sit at room temperature for 1 hour. Otherwise refrigerate for 24 hours.
Recipe Notes

If stored in the fridge these pickled onions will last several weeks. My favorite use is on top of a salad, but they work equally as well on a sandwich or burger.
